Prawn, Mango and Avocado Salad
A healthy, vibrant lunch perfect for summer. This meal has wonderful textures and tastes as good as it looks.
- 1 ripe mango cut into cubes
- 350g cooked prawns
- 1 large avocado sliced
- 100g rocket
- 1/2 a red onion
- 1/2 a lime
- 1/2 a red chilli
- extra virgin olive oil
Place the mango, prawns and avocado in a bowl.
Finely chop the onion and chilli and mix with the prawns.
Line a bowl with the rocket leaves and spoon in the prawn mixture.
Squeeze lime juice over and drizzle with olive oil.
