Great recipe. I usually don’t consider making fajitas because I’m so used to them using tortillas. I’m sure that they’d be great without, too. I love the nice brown sear that you got on the chicken & veggies.
Paleo Chicken Fajitas
We LOVE Mexican food! Chicken fajitas are a perfect meal for when you’ve got a group of friends or family round. Plus they are super easy to paleofy. Just ditch the tortillas and you’re good to go. We topped ours with some salsa but you can add lettuce, guacamole, extra veggies.
Ingredients
- 2 peppers
- 1 onion
- 2 chicken breasts
- 1 tsp paprika
- ½ tsp ground cumin
- ½ a lime
- olive oil
- black pepper
For the salsa:
- ½ a fresh red chilli
- 15-20 ripe cherry tomatoes
- a small bunch of fresh coriander
- sea salt and black pepper
- ½ lime
- extra virgin olive oil
Instructions
- Remove seeds from the peppers and cut into thin strips. Peel and finely slice the onion. Cut your chicken lengthways into long strips.
- Put the peppers, onion, and chicken into a bowl and add the paprika and cumin. Squeeze over the juice of half a lime, add some olive oil and season well. Let this marinade for 5-10 minutes.
- To make the salsa, chop the chilli, tomatoes and coriander (including stalks) and add to a separate bowl. Season and add the juice from ½ a lime.
- Add the peppers, onions and chicken to a preheated pan. Cook for about 15 minutes until the chicken is cooked through. Keep an eye on the pan so it doesn’t burn. You want a nice char-grilled colour, I went a bit overboard
- Plate up your chicken and vegetables with some salsa. Add some extra sides if you want: lettuce, guacamole, hot sauce. Enjoy!

What is the difference between “peppers” and “chili”? Aren’t “paprika” a pepper? I’m a bit confused.

Yeah we stopped making fajitas for a while cos we used to eat tortillas a lot before going paleo. I do kinda miss them but a good home made salsa and guacamole make up for it
