Kale and Pomegranate Salad
We’re always looking through paleo food blogs – most have such beautifully presented photos which really pick out the colours and show off the food. Here, at Primal Britain HQ our food photography isn’t as impressive shall we say. We love cooking paleo meals and the pics are something that we are trying to work on and learn about. So I was really excited when a friend at work asked if I’d like to be involved in her photography project. The aim of the project was to show food on a spectrum, from the least nutritious to the most healthiest. Cue our input to help out with a super healthy (and tasty!) meal.
Since my lunches are always paleo at work, it’s something that people pick up on and although not everyone agrees, there are a few colleagues that have been really interested. I was asked by one friend if I could put together a dish, something that was the complete opposite to the processed burger she had already photographed.
I decided to go for a kale and pomegranate salad with a sprinkling of pecans and sliced apples. It looks really ‘healthy’, has so many nutrients and the wintery colours work well together. Last week, I went along to a college with a very well equipped photography studio, with lots of soft boxes and flashes everywhere to shoot the dish.
We assembled the salad first of all on a light table which looks like a big white deck chair. We took a few test shots and played around with the ingredients, trying to show off the different components the best we could. The photography part actually didn’t take nearly as long as it does for me at home. The toughest part seemed to be keeping the apple looking fresh!
It would be great to have a little mini set up at home so we can get some consistent lighting. We borrowed a DSLR recently from Gary’s dad so we’re (very) slowly working out how to use that. Anyway, we were all really happy with the end results and we picked up a few tips for our own photography. We’d love our photos to look like this all the time!
Kale and Pomegranate Salad
Recipe
Serves 2
- 100g of kale
- 1 pomegranate
- 1 large apple
- 50g pecans
Directions
Wash and dry the kale then add to a large bowl
Cut open the pomegranate and remove the seeds. Slice the apple and then add both ingredients, mixing them up with the kale
Scatter over the pecans
You can add a dressing if you like, we usually go for a nice mix of balsamic vinegar and EVOO.

Wow, as soon as the page opened, I thought, that is a wonderful picture. It’s full of light and I love the pristine white background. It looks like a super tasty meal as well.
My main issue with food photography is that it’s so dark in the evenings – which is exactly when I am cooking and taking pictures. Things have improved, though, since I built a DIY lightbox. I would love to have some more lighting equipment (and space to put it in)!

That’s a great idea creating your own light box. Will be extremely useful in my place which doesn’t let in much light. Will give this a go. Thanks

Oh good, glad you enjoyed it. I think the nuts add that extra bulk to the dish.
